Choices that we promote through agriculture; it is no coincidence that we use biodynamic and organic techniques. Even the reception reflects this philosophy, because we want our guests to be able to fully immerse themselves in nature and the region through experiences, cuisine and relaxation.
Biodynamic and organic farming
We avoid pesticides and chemical fertilisers, to promote soil well-being, biodiversity and pollinating insects. We create habitats for local fauna, e.g. flower meadows and wooded areas, and use mainly native plants in our gardens.
Renewable energy
We power our facilities using renewable energy, thus reducing our environmental impact and contributing to a sustainable future.
Composting
We use organic waste to produce a natural fertiliser for use in our crops, thus closing the nutrient loop.
Feeding km 0
We favour the purchase and use of local, seasonal products, supporting local companies and limiting the impact of food transport.
Water dispensers
We provide our guests with free glass bottles and a water dispenser in order to reduce the use of plastic and promote responsible and sustainable water consumption.

Seasonality, respect for biodiversity and the territory, km 0 by choice, are the other characteristics of the raw materials that Rosella transforms into an authentic culinary experience, capable of narrating the Tuscan Maremma through taste. At breakfast you can choose from homemade cakes, fragrant freshly baked bread, homemade jams and seasonal fruit, to be accompanied by coffee, tea and natural juices.
