La Subida is a small, exclusive farming village in Cormòns. It is not just a realm of hospitality immersed in the woods, where one can breathe in a luxury that is both archaic and natural, but the dream of Josko Sirk, who gave life to this incredible project that is still carried on by the family today.

The Friulian-style houses, built in 1981, have been renovated with taste and creativity. The outdoor spaces and common rooms respect the idea of conviviality typical of the area, which, in the warmth of tradition, sees its highest expression. La Subida is an experience to be lived… with a massage that becomes an emotional journey; swimming in the swimming pool surrounded by greenery, or immersing oneself in the exclusive pool in the woods, for a moment of introspective relaxation; with a cooking class, a picnic or a country-style aperitif; or with a horseback ride.

The hospitality nature of La Subida

Sustainability is a concept that touches the environment and people. And we care about both. This is why we strive to reduce waste in the kitchen and in the residences where we welcome our guests, use only local products by turning to small local suppliers and use biodynamic agriculture in the vineyard. Last but not least, we respect our employees, providing them with constant training and the right time to manage their private lives.

Green heating

We use wood chip boilers, some of the least polluting on the market, which run on waste wood, prunings and other reclaimed materials.

Clean Energy

Produced by photovoltaic panels.

Phytodepuration

We use a natural water purification system.

The Cuisine

At La Subida, breakfast is a symphony of local flavours and can be enjoyed either in the houses or in the dining room. For lunch and dinner, you can choose between two restaurants: Trattoria al Cacciatore and Osteria la Preda de La Subida.

Trattoria al Cacciatore has a history that began in the 1980s, when it became a gastronomic landmark thanks to Josko Sirk and his wife Loredana. Today, it is Chef Alessandro Gavagna and the management of Tanja and Mitja Sirk who carry on the project, with such care that the trattoria has been awarded a Michelin star.

At l’Osteria la Preda de La Subida, on the other hand, one stops to enjoy genuine dishes and excellent wines in an informal atmosphere, perhaps even buying local products. The suppliers are all local and closely linked to La Subida.
